The 2000 Cabernet Sauvignon Volcanic Hill exhibits sweet fruit, and seems clean, but the tannin remains elevated, and it has a clipped, narrowly compressed mouthfeel as well as an astringent finish. The aromatics and flavor attack are impressive, but the finish is worrisome. This appears to be a gamble if aged beyond 5-6 years. This Cabernet is medium-bodied, but excessively tannic.
